He has to make sure Emily's steak is actually rare, bleeding, mooing, because God forbid it arrive even flirting with medium. So he checks. Twice.
Then it's the cutlery. Has to be gleaming. Reflective enough that he could see the slow erosion of his will to live in it. And the plate needs to vanish the second she's done with it, only for him to realize she barely touched it. Half the steak left there. Which means the rat-dodging, shirt-sweating, subway-holding journey to the overpriced French place was entirely for show.

Summary
The last time he had any kind of contact with a Hotchner was probably a decade ago. Foyet had torn through whatever solidly built connective tissue linked Hotch to the BAU, and, well, she was the BAU. Has been, basically, since forever. So no prizes for guessing what that means. She got cut, too. The mature choice, all things considered, though what exactly they were considering back then doesn't matter now. Not really.
Kind of hilarious, honestly, that this lands in her lap now. Now, when she's already decided that the only thing tethering her to work these days is the stuff she talks about in therapy. Nightmares. Years spent drawing wild, red-string conclusions that led to neat answers have coached her brain to assume the email showed up because she's finally... stepping back? That the universe is rewarding her with narrative symmetry. It's not.
