Apple filling
- Preheat the oven to 400°F (200°C)
- Prepare your apples by washing them and dicing them into small cubes. Once cubed, place the apples into a large-sized glass bowl, mixing in 1 Tbsp of lemon juice to reduce any browning that can happen during the prep.
- Turn on the stove to medium heat and. In a small saucepan, pour 1 cup of honey and 2 cups of milk on the heat to simmer. Once brought to a simmer, reduce the heat to low.
- Mix in 1 Tbsp of powdered cardamom, 1 Tbsp of cinnamon powder, and ½ Tbsp of nutmeg powder into the saucepan, stirring gently until mixed in. Cook the sauce for around10 minutes, stirring occasionally.
- Once the sauce has thickened, (it should be the consistency of a loose caramel) bring over the bowl of apples and pour the sauce into the apple bowl, tossing lightly until all the apple chunks are coated.
Turnover
- Dust ½ a cup of flour on a clean surface, and place 2 sheets of puff pastry on top. Dust the other ½ cup of flour on top of the sheets to reduce any stickiness.
- With a large sharp knife cut, each puff pastry sheet into 6 equal squares. With your rolling pin, gently roll the squares out enough but not to the point of tearing them. You want to have enough room to put in the filling while avoiding any over-fill.
- Using your large silverware spoon, place 1 spoonful of the sauce-coated apples into the middle of each square of puff pastry, leaving a small border around the outside. DO NOT OVER-FILL!
- Once each square has filling, fold each square diagonally in half to create a triangle shape, pressing down the border of the closing side to seal the filling inside the pastry.
- Take a large baking sheet and cut parchment paper to the size of the baking sheet. Spread 1 Tbsp of oil (olive or grapeseed) over the parchment paper so the pastries do not stick to the sheet. Place the pastries on the baking sheet, spacing them out so they have room to breathe.
- Melt ½ cup of unsalted butter in a small glass bowl and whisk it together 1 large egg until it is foamy. Taking a sauce brush, brush the buttery egg wash on each pastry.
- Dust a cup of cinnamon sugar over the pastries using a sieve.
- Place the apple turnovers in the oven, baking for 20 minutes or until golden brown.
- Serve on a plate with the optional vanilla ice cream and ENJOY!
