Since they are getting the chance to visit both Jemma's parents and Fitz's mum, it made sense to try to explore those relationships a bit. It seems like Jemma would get a lot from her mother (and we'll get to see quite a bit of the Simmons family in future chapters). The last name question will be answered in future chapters (though be assured that Fitz would never ask Jemma to change her name for him).
As of right now there isn't more to Philinda's annulled accidental marriage (though I'm sure these things happen all the time). Season 1 was so funny and light that we wanted to include some of these details to get everyone in the mood. But perhaps this is an idea for another fic.
