- 1 onion, chopped (note: don’t cut around Sarek, the poor dear worries about my sensitive human eyes or something equally illogical)
- 1 tablespoon oil
- 2 pounds (900 grams) plomeek root, scalded with skins removed (note: if no plomeek root is available, use equal parts potatoes and beets)
- 2 stalks celery, chopped (note: don’t tell Spock I use celery, he’ll insist that he can taste the stringy bits, even if I remove them)
- 4 cups (960 grams) vegetable broth
Cook onions in oil until slightly translucent, about five minutes (note: I know it’s not traditional but the traditional soup is bland. Add garlic, about 2 cloves).
Add vegetable broth, heat until boiling.
Add celery and plomeek root, boil until the plomeek root is soft, about 30 minutes.
Blend until smooth.
Serve (note: add sour cream. dill. salt. something)
