Percy's just tired. He was used to camp giving him a berth ever since he had been claimed two years ago. But things had been on a downward spiral ever since Thalia had been untreed it felt like. Because he doesn't say anything but he definitely notices the difference between how they've been treating her.
And how the last two years have gone.
So maybe when someone finally notices that something's not quiet right after that game with the Hunters. He finally loses his temper just a little bit.

Good news: Someone finally paid attention to the fact Percy probably needed to be looked at and his healing abilities didn't fix everything.
Bad news: Percy's just done with everyone's behavior at this point and isn't exactly holding back on his opinion. -

Summary
Percy gives Sally the head of Medusa like in canon.
She chooses to not statue Gabe, knowing she might lose her son because of it.
The only issue is that she forgot to tell Percy that she didn’t use the head and he comes home from camp expecting no Gabe since she gave every indication that she didn’t want to live with him anymore.
He was wrong.
He became the thing he would fail to save in the end.
