Summary
There are many, many universes where Mace Windu dies, trying to arrest the Sith Lord. This is not one of those.
In this universe, Mace Windu lives.
He does not owe his life, as he so often does, to an Organa or a Veers. Not in this universe. Instead, Mace Windu is saved by Padmé Amidala and, arguably, the Skywalker twins.

In this one universe, Padmé Amidala goes into labor early. She is being rushed back to her apartments by her security team when the Jedi falls past them. She orders her pilot after them immediately.
The catch is narrow and the Jedi is unconscious, but this is how Mace Windu lives.
