Voodoo dolls work because of the magical Laws of Contagion and Similarity. The first law says that you can bespell a target by casting magic on something close to it. The second law says that you can make an effect happen by imitating it on something else. Unfortunately for Jared Padalecki, Crowley wants Sam Winchester - and Jared is the perfect human "voodoo doll" to make it happen.
