Only Spock knew that inside Jim's chest there was no motor or microchip, only pure, soft cotton. No little miracle to explain his clumsy walk, his hoarse laugh, or the glowing light in his plastic blue eyes.

Jim nods, “Right, good, so are you...”
“No, Captain, I do not believe I am. Furthermore, it is not the way of my people. It is ill advised to attend something of this nature with a 'date' or accompanied with one who is not yours.”
So definitive, Jim feels shot-down, and why? Spock stated something logically and truthfully. Tradition with him was always such a final thing, written in stone.
“Of course, Mister Spock, wouldn't dream of doing anything so ill-advised.”

Summary
A number of people write TOS stories because Kirk, Spock, and McCoy are so iconic or so delicious or so wonderful, even though their understanding of Star Trek comes mostly from The Next Generation or Deep Space Nine or another of the Star Trek series. To keep your story within TOS boundaries, here are a few things to keep in mind.
This is an essay, not a story, and it's about the television show, not about the movies featuring the same cast. (The movies were somewhat different than TV-show-era Star Trek; this essay is only about the show.)
Just Added: Chapter 2, on how to make Kirk and McCoy talk like Americans, even if you aren't one. :-)

Pilot First Class Cosmonaut Kirk of the United Nations Aeronautics Division will be the first man to break warp speed. Or he was until, in some horrendously predictable sci-fi cliché, his shuttle is sucked through space and he crash lands on some grossly hot desert planet.
He should have named his shuttle the Delorean because he’s not too sure this isn’t some future Earth post nuclear war, and those pointy eared dudes shouting gibberish at him had better be a mirage because if not they’re probably post apocalyptic cannibals.
Or, the one where Pilot James T. Kirk’s shuttle crash lands on Vulcan.

In 2194 TiMERS, devices that count down to the exact moment one meets their soulmate, are invented. In 2244, Spock's parents specially request a Matchmaker to be sent to Vulcan to give their son a TiMER. In 2249 Jim Kirk gets a TiMER as his first act of rebellion against his mom, who never wanted him to go through the heartbreak she did when losing her soulmate. In 2258 Jim Kirk is court martialed for cheating on the Kobayashi Maru sim, and makes eye contact with his soulmate. In 2258 his soulmate rejects him.
OR: canon era Soulmate AU, where Jim and Spock are soulmates and EVERYBODY knows it.
