This is something I have reflected on a lot in the past. Jacob can't top Edward. In fact, wolves (and humans, for that matter) can't top vampires at all. This is why.
This is an AU in which Jacob and Edward are together. The “how” won't be addressed, because this is not the focus here (and sadly because I don't think I'd have time to get to where I wanted if I started from the beginning). Feel free to use any of the great (even if there aren't enough of them imo) stories here that address that.

Summary
The premise is quite simple: this starts similar to Twilight, the major difference being that Bella is Beau. Wow, how imaginative, right? It has only been done a thousand times.
The difference this time is that the story will eventually deviate from the original, because I honestly don't believe the MC being male would have led the story to the same ending (obviously). So, yes, the story starts similarly, but it will change as soon as a Beau, as a male, acts different from Bella, mainly because men and women do tend to act different.
Another point that should be worth mentioning is that, while this has also been done before, Beau's character is never quite believable, to be quite blunt. In such stories, Beau is depicted too much like a girl, and I sense this is because authors are themselves girls. So I, as a cis male, will try to twist his personality a bit so he feels more like a guy this time. Perhaps this doesn't make a lot of sense, but it might, so I want to share, to see if anyone is interested.
No other character will be genderbended apart from Royal (Rosalie) because I'm obsessed with Emmett/Royal.

The twenty-first century sees Steve alone and hurting. His STRIKE unit is really all he has. The worst thing about this time, other than not having Bucky, is that no one ever touches Steve. It isn't normal now like it was in the '40s. He misses it. Touch-hunger is a thing, especially for an Omega.
He ends up doing a complicated dance with his STRIKE co-commander, Brock Rumlow, to get what he needs without scaring the Alpha off....or leading him on. Eventually they settle into a somewhat comfortable routine. And it just gets more comfortable as time goes on. He finally starts to move on, move forward with his life. Then the helicarriers come crashing down around him and he has to deal with the weight of being betrayed by everyone he cared about most.
He...he had bonded with Brock. And Brock betrayed him. Brock held his first Alpha hostage. But how had their bond broken if Bucky was still alive? And why was Bucky flinching away from him, and curling into Brock's arms?
