There are two reasons why he puts up with stuck-up nobles sneering at him condescendingly for mixing up the forks at dinner, making arrogant comments about his missing arm, and thinking him stupid for being a laborer.
First and foremost: his support for his sister on her way: the first working-class councilwoman in the city of Lumière. For her and Maëlle, he would pluck the moon and all the stars from the sky. As long as Emma needed him, he would go to any soirée and make an ass out of himself; antiquated traditions be damned.
Secondly, though?
To stare yearningly at Verso Dessendre.Due to her role as councilwoman, Emma gets invited to a lot of high society events. Gustave surely only accompanies her because societal expectations require it. And not at all because he is in love with a certain Verso Dessendre.
Now he's dressed up as a forest spirit and feeling uncomfortable at a masquerade ball. So much for masks hiding differences, right?

Summary
Modern AU - by Gustave’s definition, he is most certainly not a virgin, (frottage to the point of mutual completion back in his high school days) but that definition just isn’t doing it anymore at 32, so he goes to a bar for a hookup just to get rid of all of his fucking nerves about the whole thing, not even expecting it to be a good time.
Cue in Verso, who just goes home with Gustave expecting a quick one night stand - only to once he finds out about how Gustave’s never had real sex before, to show him just how good it can be, over multiple hookups, slowly but surely falling completely for him and stopping his fuck-boi tendencies
