Summary
Elim Garak can be a vexing man to look after. Results are better if two people cooperate.
Or, there is still one person on Cardassia who cares about Garak, and she teams up with the other individual who has earned Garak's trust: Julian Bashir. Surgery is performed, misunderstandings are (eventually) cleared up, and Tain would be appalled, which everyone else thinks is very much for the best.

Summary
Deep Dish Nine is a Deep Space Nine AU in which the cast are all Human, and work and live around a pizza shop rather than a space station.
The shop is connected to Quark's Bar next door, and there's a tailor shop run by a really odd man a few doors down. Everyone who works in or near the shop, coincidentally, lives in the apartment building in same block/plaza/whatever. The shop used to belong to the Cardassia Heights neighborhood and was owned by a guy called Dukat, who had operated a gangster-themed place called Taco Noir.
Planets have become countries and ethnic neighborhoods like Cardassia Heights and Little Bajor. Species are nationalities and ethnic identities. Some characters changed a bit in their translation to Humans, or even in their translation to a new profession. There is some history behind everyone, so if they do something slightly different than what you might expect, I hope you'll trust that they have a reason to! I hope to reveal said reasons eventually!
This particular series is an exploration and development of Garak/Bashir in the confines of this universe. It will contain one big long chaptered work that follows an actual timeline and also some extra 'what if's.

It is difficult to have a private moment under the constant vigilance of cell-mates and one's disapproving father. But all Garak needs is a minute of peace before he can allow himself to go in to work again; Bashir does not think a single minute is enough.

It's only a matter of time before he identifies what's happening. These new feelings are inconvenient and unwelcome and Julian Bashir doesn't know how this happened or what to do about it.
Garak knows that good things come to those who wait, only, he's been waiting for awhile for the Doctor to figure it out.
And then there's the war and their paths diverge. He would like to think he'll see the Doctor again, but one can never say.
