The demon still stood by what he said - it wasn't stealing. The reverse of it, actually. Unstealing, perhaps.
He was sure the angel wouldn't actually do anything to regain his item but...
...what if Crowley did that instead? He was still a demon and committing crimes was his bread and butter. Now that he was an independent contractor of sorts, he could allow himself to spread foment for reasons other than evil.
