Will is on his knees before Hannibal, carefully undoing Hannibal's tuxedo trousers. Will had been less than polite at the opera that evening.
'By now I expect better of you Will. It is not the first time you have accompanied me to the opera. Your behaviour was borderline rude,' he says, gently running a hand through Will's hair before tugging hard to force him to look up. Everyone made assumptions about Will Graham.
They heard Louisiana; they thought poor.
They heard single parent father: they thought not well cared for; Daddy probably a drunk
They heard Daddy worked on boats: they thought odd jobs man, picked up work where he could get it

From what Alana Bloom and Jack Crawford had told him, and after their brief, sarcastic and borderline hostile interaction in Jack’s office, Hannibal was expecting Will Graham to be an isolated individual. He would undoubtedly avoid most social situations wherever possible, and was highly unlikely to pursue close personal relationships: especially those of a sexual nature.
As their not-therapy sessions continue, Hannibal finds that Will Graham is not quite what he’d expected, and realises how wrong his initial assessment was.

Will's identical twin brother Bobby, a detective with the LAPD, moved East to care for Will and is now working at the FBI doing cold case reviews.
Jack's second pick is Dr Hannibal Lecter, a psychiatrist suggested to him by Dr Alana Bloom. Dr Lecter has some experience in forensic psychiatry, which should translate well to profiling.

Hannibal is very unimpressed to hear his serial killer name reduced to the ‘Cheesecake Ripper’ by the barbarians of the BAU.
Will is one of the few people who knows that not only does Hannibal have a highly developed olfactory sense; he is also blessed (or cursed, in this case) with highly sensitive hearing. Unfortunately for Hannibal, Will takes advantage of this. Twice.
Will realises it was foolish of him to mock Hannibal, and finds an unorthodox- and unexpected - way to apologise to him. Hannibal goes home with a pocket square full of Will.
