It’s soft, and such a vivid red that he wonders how he ever could’ve been so foolish to call her carrots; it’s the colour of everything he’s ever loved in the world, reminds him of the colour his dad’s nose would go in the winter and the setting sun.
Anne’s simply staring up at him with wide, shocked eyes and he can’t say those things to her, can’t tell her such things. So, he simply finishes with, “It’s pretty.”
