Gusteau's was doing well, all the staff had eventually accepted Remy as a chef, including Skinner, and things were looking up. Linguini was starting to get used to his now more managerial role as owner of the restaurant. Colette had been promoted to co-sous chef, along with Remy, and the two were working together really well.

Summary
What happened after the night one of Paris' most infamous food critics gave his first and last praise of Gusteau's, and what led to the establishment of the La Ratatouille bistro? The answer lies in four individuals, an unlikely culinary quartet seemingly brought together by time, fate, and their memories.
What was once a single short story focusing on Ego leaving Gusteau's on that fateful night and the penning of his famous review in his office will be expanded to include Linguini, Colette, and Remy, eventually culminating in a chapter involving all four of them. Includes additional information such as headcanons, references, and my own commentary.
Here's to more years to come for Pixar's Ratatouille!
(Also, please heed the tags since this fic will include some heavy topics in the middle sections of each short story, or, as I personally call them, the "Lost Time" sequences, as well as the afterword.)

Ariel Triton and her family are attending the anual Walt Ball, Triton is trying to get his youngest daughter and the young heir of the neighboring kingdom, prince Eric, to exchange more than a few friendly words. Meanwhile the equally young- but not nearly as royal- Jim Hawkins is hoping not to spill the fancy food on the fancy guests. Ariel will realize that attending the pretentious ball wasn't such a bad idea after all while Jim will figure that maybe, just maybe, the paycheck isn't the only attractive thing about the event.
What a shame princesses don't marry kitchen boys.
