Hannibal's growing affinity for Will compels him to use a somewhat softer approach to influencing the man than he had originally planned, and Will isn't impervious to becoming the object of someone's affection after a lifetime of self-imposed social isolation.
TL;DR: S1 goes in a much fluffier direction as of "Sorbet." Will is Will. Hannibal is Hannibal, just a smidge closer to the man we know and love by the end of S3.

Will knows he's in for it when he gets home. For a very brief moment, he considers not going home at all. He knows Hannibal is going to be mad. He thinks about telling Hannibal he's working late, or that he decided not to drive home. He'd probably get away with it too, if Hannibal is willing to believe that it's in character for Will to choose not to drive home in the dead of night out of some fear for his safety.
The odds of that aren't high, though. Hannibal knows Will better than anyone, that's one of the things that makes him so damn annoying sometimes.

He does none of these things with the intention of distracting himself. The necessity of distraction, of escapism, implies there is something from which one must escape. He is not running. He runs from no one, least of all himself.
And yet there are rooms in his mind where he must not go. Doors that are closed on purpose, cordoned off with velvet ropes and papered over with everything he has become.
Hannibal is depressed. Will invites him over for dinner.

Will knew what had happened. He knew exactly how Abigail's ear had gotten into him, who had shoved it down his throat. He also knew that trying to indicate Hannibal as a killer again was futile. Jack seemed to want to believe him, going by the conversation in the BSHCI's visitor hall, but Jack needed something concrete, evidence. Hannibal had eluded capture for so long, he wasn't going to start leaving fingerprints or hairs at his crime scenes now.
No, Will was going to deal with Hannibal Lecter on his own terms. The man deserved to reap what he'd so carefully sowed, didn't he? He deserved to experience what he'd coaxed forth from the bottom of Will's soul, to see the result of his machinations.
