Summary
It shouldn't be a surprise, really, if the knights think punching each other in the arm is a viable and efficient way of cheering each other up, that they also think insulting each other is a perfectly good way to show affection. Insults are compliments, threats are reassurances, and actual bodily harm is considered good manners or at the very least the mark of genuine companionship. Basically, take everything Merlin's ever been taught about how you actually treat the people you care about and flip it on its head, because stars know that if any one of these men actually behave as though being nice won't incinerate them, the world will actually end.
Alright, maybe he's being a bit harsh.

“Why not?” Merlin argued. “I’m happy to be Leon’s temporary servant. Although,” he turned to him, “just pretend it’s a permanent thing to Arthur.”

Then, one day, Merlin was stopped by a lord, who secretly wanted that fabled hot bath, and asked him to be his servant, offering a hefty pay. It was still lower than what Arthur gave him (though Merlin never boasted about it, so not many people knew.
Which, if they did, would have realized that despite experiences just how much the king valued his servant), so Merlin pulled a face and said, “No,” then walked away, leaving behind a horrified lord who had just been told no to his face for the first time.

A lady approached him once while he was fetching Leon’s dinner and made the same offer of being her servant.
Merlin stared at her in disbelief. The lady huffed. “You’re quite handsome for a servant. Surely it will be an honor serving me.”

Merlin blinked at him, flushing red. He was quite honestly touched and a little more than surprised.“I— I— It’s— It’s up to Leon now,” he stuttered.
Leon looked at him, and— He actually looked reluctant. He liked having Merlin around. Arthur turned to Leon.
“Please, Leon,” he pleaded. “Please sack him and let him come back to me.” Leon chewed on his bottom lip.
“As long as you treat him well,” he permitted. “If not,” he faced Merlin, “you’re more than welcome to come back to my service.”

Gwaine challenges anyone in Camelot not to have had the occasional flight of fancy about one of their famous knights swooping in to save them, all shining armor and tousled hair, or the wish of being courted by such a noble suitor, or even just a night, one night, to find out what's really underneath all that armor. Their knights are the stuff of legends, after all, and bards are commonplace in a tavern, can he be blamed for how he listens to them? Especially working in a tavern so close to the citadel itself, where the knights will actually come and drink during their evenings, well, that's just like putting a fresh pie on the counter and expecting it to be there when he returns.
And if there's one knight in particular that happens to occupy Gwaine's mind more than any other, well, that's between him and his thoughts.
